Should I Skip Jellies and Use Peanut Butter and Pickles, Salad, or Kimchi Sandwiches?

I’ve been a peanut butter pickle sandwich seller for about ten years now. I don’t know where I originally read or heard about the feelings of the era of depression, but I know that it was love at first bite. In fact, the very first article I was ever paid to write (for the now defunct xoJane) was an elaborate peanut butter and pickle flavor test with a wide variety of cucumbers.

It would be unfair to say that I owe my entire career to this combination, but it definitely set the tone for my future creativity, for better or for worse. So I’m always ready to try peanut butter sandwiches. People in the United States tend to think of peanut butter as a sweet ingredient that is best baked in cookies or combined with jelly or chocolate, but this is a mistake. (Think Pad Thai, peanut stew, and a host of other fine Asian and African cuisines.)

To test the limits of the peanut butter sandwich and hopefully find a new favorite, Joel and I started our tour of taste with a classic PB & pickle (to make it easier for Joel to make this sandwich genre easier). Then we switched to PB with salad and PB with kimchi. The making of this video was a journey through the peaks and valleys of texture with bold flavor combinations that surprised both of us. (Well, mostly Joel. I wasn’t that surprised because I’ve been “addicted to things like this” for a long time.)

I challenge you to try with us, and I challenge you to let these sandwiches inspire you to create your own unique and interesting peanut butter delicacies. (If you need even more inspiration, I have more suggestions here .)
