Make a Savory Vegan Risotto With Miso Instead of Parmesan

Risotto is tricky to perfect, but if you are vegan or cook for someone who loves it, things get even more complicated . Luckily, you can make a delicious and savory risotto by replacing Parmesan cheese with miso paste.

Parmesan cheese (and sometimes mozzarella) is the main ingredient in most risottos, but J. Kenji López-Alt has a simple workaround for a more savory dish that’s also 100% vegan-friendly. Instead of adding a few tablespoons of grated cheese, add about a quarter cup of miso paste. Of course, you don’t have to be vegan to follow Lopez Alt’s recommendations.
