Find Out When Your Sauce Has Decreased Enough With a Jury Wand
It can be tricky to determine when your sauce or other liquid has decreased enough. With a jury stick, you can check in seconds.
Reduction, the process of heating a liquid to thicken or enhance its flavor, usually has to be played by ear. To make the game a little less like a guessing game, Emma Christensen of The Kitchn recommends using a jury stick:
Make a jury stick by wrapping a rubber band around a chopstick or skewer and submerging it in the liquid when you first start shrinking. Roll the gum over the stick until it touches the surface of the liquid – this is your starting point. As the liquid decreases, insert this stick into the liquid from time to time and use it to determine how much the liquid has decreased.
This method is best for when you need to reduce the amount of fluid. For a smaller amount, you can simply tilt the pan to visually tell how much water you have prepared. Finally, if you’re just trying to amplify the flavor of the sauce , focus on taste. For smarter pruning methods, see the link below.
