I Ask You to Moisten Hard-Boiled Eggs With Butter.

Once you’ve stumbled upon an exciting new way to eat eggs, you can set aside time for breakfast and skip it altogether. I’ve gone through several phases of eggs over the past few years: light poached eggs were a success until I discovered cornstarch eggs that had recently been superseded by hard-boiled twist eggs. Melissa Clarke told me to pour butter on the eggs, and she was right.

I know what you’re thinking: ” Ugh. “But we add butter to and around eggs all the time; after all, hollandaise sauce is essentially an excuse to pour poached eggs in ghee. Avoiding the usual intermediaries – toast, English muffins, well-buttered pans – and butter the eggs directly is just a fast track. In fact, it makes perfect sense. Buttered eggs are more than a logical shorthand. They are completely outside the scope of their description, although it is not immediately clear how exactly. What makes this tiny hack so effective to change his life? Is it just butter and egg yolks delicious together? On reflection (the haters would say too much), I decided that the magic lies in the oil’s ability to make breakfast more convenient. After a while, boiled eggs start to seem rather boring, especially if you eat them most often in the morning, but even the smallest piece of butter is completely transformative. Suddenly, my usual protein-rich breakfast was a real treat; what I’m really looking forward to. I eat eggs and butter every morning and have never felt more powerful.

Here’s my usual procedure: Bring a pot of water to a high boil , gently add the eggs and cook for 8 1/2 minutes. (This gives me yolks, which are about 90% seized and 10% jam.) Cut the peeled eggs in half and brush with a little oil; sprinkle with crispy salt, chopped red pepper flakes and Frank’s Red Hot. Consume immediately. There’s no wrong way to butter an egg, but I’ve found that a little temperature contrast makes a big difference. If you eat eggs hot, refrigerated butter softens perfectly without turning into a full puddle; If you boil them in large quantities and store them in the refrigerator, butter at room temperature is best. In addition, fillings can be anything from regular salt and pepper to any seasoning for bagels. My boyfriend likes it with furikake, and we liked Trader Joe’s buttered eggs with cast iron. I don’t think I’ll ever get tired of Frank’s buttered eggs, but if that happens, my new favorite filling is probably already in my pantry.
