Freeze Tomatoes for Easy Preservation

A good tomato is a terrible thing to not waste, but canning can seem like such a tedious job. Fortunately, The Kitchn has a quick and very easy way to keep them cool: freeze them.

The link below takes you through the entire process, but all you really need to do is peel, core, and put the tomatoes in a freezer bag where they will be stored for up to six months. When you’re ready to use them – for sauce or soup, not sandwiches – just let them thaw for about an hour and then peel them off.
