Happy Hour With 3 Ingredients: Bee’s Knees

Happy weekend and welcome back to Happy 3 Ingredient Hour , a weekly drinks column featuring very simple yet delicious libations. This week, I want to talk about a sweet and sour classic cocktail perfect for a sophisticated patio sipping: Bee’s Knees.

The Bee’s Knees is a super simple sour drink that has always been around. This is my favorite because while served in a fancy coupe glass, it’s easy to prepare, delicious and made with ingredients you probably already have in your kitchen. While in most recipes you make a syrup with equal parts honey and water before adding it to the drink, I like to use honey directly because not only am I lazy, but I really, really love the taste of honey. To hesitate with this drink, you will need:

  • 2 ounces gin
  • 30 g fresh lemon juice
  • 1 tablespoon honey

Add everything to a shaker and stir until the honey dissolves. Add ice and shake vigorously for at least 15 seconds. (Shaking vigorously will smooth out the syrupy nature of the honey and give you a nice lather on top.) Strain into the compartment glass and sip your reward.
