Turn Woody Broccoli Stalks Into Delicious “noodles”

When it comes to broccoli, all the glory goes to the flowers, and the stems are (unfairly) called “woody” and “tough.” Being an oddball, I actually prefer the stems, but even I didn’t think of turning them into delicious fake noodles in a spiral.

The sturdy body of the stem makes it an excellent candidate for spiraling. In fact, the thicker the stems, the better the broccoli noodles will be. Use a vegetable peeler to remove the small protruding pieces, then insert the stem into the spiralizer, with the thick end first. Once they’re all noodles and ready to go, add some protein and a delicious sauce (like in this Skinnytaste beef and broccoli recipe ) or use them as a base for a hearty salad.
