Use Every Strawberry Bite to Make Pesto With Tops

Strawberries are the most valuable product of the summer, and it is wrong to spend at least a little of one berry. If you have fruits that still stick to the stems, you can use them to make delicious infused water , but the small green leaves have another use: pesto.

This shouldn’t be that surprising since almost any green thing can be done in pesto , just start with a 1: 2: 2: 8 ratio (1 part nuts, 2 parts butter, 2 parts grate cheese, 8 parts leaves or grass ), add garlic, lemon, salt and pepper to taste. You can make strawberry pesto with the above ratio, or you can get super fancy and use Chef Clark Barlow’s (heirloom chef and owner) recipe linked below. Either way, you have amazingly delicious summer pesto, perfect with pasta, bread, and other foods that pesto goes well with.
