Whisk the whites with a pinch of salt until stiff peaks form and whisk half of the mixture with the yolks. Carefully add the rest of the proteins, put in the pan, sprinkle with grated cheese, cover and cook for three minutes. Fold, place the resulting soufflé on a plate and top with oil and garlic.
