Prepare a Quick Batch of Delicious Caramelized Onions in the Pressure Cooker

Caramelized onions are great for enhancing burgers, pasta, salads, and for adding to the classic French onion soup. They usually take time to perfect, but a pressure cooker can speed up the process.

J. Kenji Lopez Alt of Serious Eats has shown that caramelized onions can be cooked much faster with a little baking soda , but admits they don’t taste as good as “real” slow cooked onions. Luckily, he found another great way to speed up the same process and still get the best taste: use a pressure cooker. Start by melting butter in a pressure cooker, then add thinly chopped onions with a little salt, pepper and a pinch of baking soda. Close the lid and turn on the heat so that there is high pressure in the pressure cooker. After about 20 minutes, you should be able to release the steam and reduce the excess water, leaving you with delicious dark brown caramelized onions.
