Line Your Root Vegetables With Jam Frosting

Root vegetables like carrots and parsnips are versatile and especially tasty when roasted. Add an unexpected touch of flavor by icing them with jam. Since root vegetables tend to taste mild, you can experiment with any jam you have in the fridge.

You can easily make a frosting by mixing 1/4 cup jam and 2 tablespoons of a liquid such as water, balsamic vinegar, or citrus juice. If you need a thicker frosting, use less liquid. Chef José Garces advises combining the jam frosting with other spices (such as mustard or cumin) for a balanced savory dish. This will give you more depth in your glazed vegetables.
