Add Ice Water to the Burger Patties to Keep Them Moist

We thought that we will find all the tips on cooking burgers on the order , how to pack the patties, to how to properly break hamburgers . But here’s a clever sound we’ve never heard of until now: To make the patties juicier, add some ice water to the meat.

This tip comes from Chef Charlie Palmer , who offers his take on the hamburger in the new book Charlie Palmer’s American Fare. In the footnotes to the recipe, he adds:

I always add some ice water to my burgers as it helps to distribute the seasoning evenly and also ensures that the burgers stay moist and juicy.

It turns out that adding ice water helps restore some of the moisture that is lost during the cooking process. Other reliable sources have confirmed this to be a useful method; for example, Fine Cooking recommends adding 2 to 3 tablespoons of ice water per pound of meat.
