Slice Pumpkin Spaghetti Into Rings for Perfect Pasta-Like Strands
If you regularly cook spaghetti at home, your life will soon change. Cooking editor Christine Byrne of BuzzFeed just discovered a ridiculously clever way to improve the flavor of pumpkin spaghetti: slicing the pumpkin into rings before baking it.
For long strands of zucchini spaghetti that are tasty and not mushy, cut the zucchini into rings and bake them in the 400ºF oven for 40 minutes. Cutting the winter squash into rings before baking will keep the strands long and look more like spaghetti.
If you look closely at the pumpkin spaghetti, you will notice that the strands are actually criss-cross . So when you cut a pumpkin in half before roasting – the traditional method most people use – you actually lose the integrity of those long, spaghetti-like strands. This method also tends to float the pumpkin too much, so it can become too soft and watery.
One note: Pumpkin spaghetti skins are notoriously difficult to cut, and this method requires more knife work. So either buy a small pumpkin to make preparation easier, or make sure you have the sturdiest knife (or even a cleaver) for a large pumpkin.
