Add Tartar to Chickpea Liquid for Super Stable Egg-Free Meringues

Chickpea liquid (“aquafaba” if you like) is a great vegan egg substitute in pastries such as meringues, frostings, and angel food pie. If you want your egg-free wonder foam to have real hold, just add some tartar.

As with eggs , tarter strengthens the protein matrix of the liquid, stabilizing the foam and making it very fluffy. You don’t need much either – a quarter teaspoon is enough for a can of liquid. Once your foam is whipped, you can stack it into any eggless creation you want that day without worrying about it falling flat.
