Microwave This Crustless Single Serving Pumpkin Pie

For some reason, I hate following a bunch of keto-focused influencer accounts on Instagram. They lure me in with a pile of meat and then hit me with a bell pepper and bread “sandwich,” a monstrosity I’ve been familiar with since my weight-watch days in my early 20s. They’re also obsessed with microwaved “no pumpkin pies.” crusts,” which inevitably contain too many eggs and a spoonful of sugar-free sweetener. These desserts aren’t tasty, but this one-serve crustless pumpkin pie is delicious and can be made in the microwave.

The problem with keto pies isn’t the microwave or that they don’t have a crust, it’s that you have to use a whole egg for one serving, which is too many eggs. Combined with alternative sweeteners, this gives the dessert an unpleasant rubbery texture, and pumpkin pie should be smooth and creamy, regardless of the condition of the crust.

By replacing the eggs with a little cornstarch and sweetening the dough with real sugar (and a little sweetened condensed milk), you’ll have a dense, silky pumpkin pie filling that comes together in less than three minutes. All you have to do is mix everything together, pour it into a ramekin or coffee cup and set it to nuclear for a few minutes. The filling will rise and fall sharply, finally forming a slightly concave surface, perfect for filling with a heap of whipped cream.

Single serving pumpkin pie without crust

Ingredients:

  • 1/4 cup canned pumpkin puree
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons brown sugar
  • 1 tablespoon sweetened condensed milk
  • 1 tablespoon cornstarch
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • Whipped cream, for serving

Add all ingredients to a small to medium bowl and whisk until completely combined. Pour into a greased ramekin or coffee cup and microwave on full power for 2-3 minutes until the top is dry and wrinkled. Microwave with the door open until cool enough to touch, then transfer to the refrigerator for at least an hour. Serve with whipped cream.
