You Must Make Waffle Cookies With Sausage

I’m a big fan of McMuffins, but I grew up in a family that ate sausage biscuits. Every Christmas morning we bought them at McDonald’s (because they were open), but the best sausage biscuits came from the gas station (where you can also find the best fried chicken). After all, this is a simple sandwich that is best bought in a simple place where no nonsense is tolerated. All you need is a tender biscuit and a well-seasoned sausage patty. No lily gilding, no tricks.

This all goes to show that under no circumstances would I definitely need to waffle a cutlet with sausage into a circle of store-bought biscuit dough. No one asked for this – it’s almost disrespectful! But I did it anyway and I’m glad and I would do it again. The resulting waffle is savory, fatty, meaty, salty, crunchy, tender and, if you drizzle it with maple syrup, sweet—an almost perfect, if a little crazy, bite. The fat from the sausage soaks the dough underneath, soaking it in the salted pork fat. The bottom becomes golden and crispy, while the top remains slightly crumbly and tender thanks to the steam (and even more fat) released by the sausage during cooking.

It, like most of our waffle treats, is easy to make. Take a tube of store-bought biscuit dough, take out one circle and place a 1/4-inch slice of sausage on top of it. (I chose Jimmy Dean’s Spicy Sausage, which comes in a 1-pound slice.)

Set the waffle iron to medium-low heat (so as not to burn the bottom of the biscuit), place a stack of fat in the center and close the waffle iron. Cook for about 5 minutes or so, rotating the disc halfway for even browning. (The part near the hinged end of the waffle iron always cooks a little faster.)

Cook until the waffles are dark golden brown on the bottom and the top has lost its raw dough stickiness. Remove from the waffle iron, immediately put on a plate and serve with syrup; it’s ditch pools in the most delightful way. You can also put an egg on top, but keep in mind that you’ll need to take a nap or maybe smoke a cigarette afterwards.
