7 Perfect Pickles to Keep Close at Hand

I found out that I have ADHD at the end of my life. It got funny when I went from being hesitant about revealing this to close friends to realizing that literally every woman I know (and most other people I know, too) has ADHD.

Pickles also have ADHD, if you will.

They are ambitious and complex, resilient and resourceful, but sometimes outside sources influence them rudely. They constantly try to be something different and better, using their surroundings in an interesting way. (Or is it just gently rotting food that we put in hamburgers.)

In any case, I’m glad that the last decade of food writing has emphasized the importance of balancing our foods with acid. Here are the pickles that, in my opinion, deserve the highest praise in this regard.

(Note: Nearly every culture has a conservation method that has resulted in an awe-inspiring array of pickles in every kitchen imaginable, and I’m here for every damn thing. This is just the one I use the most, but I really want to hear about yours.)
