10 Vinegars You Need to Have in Your Kitchen (and How to Use Them)

I love acid. The vast majority of foods, salty or sweet, are enhanced by their bright astringency. There are two main ways to add acid to your cooking: citrus fruits and vinegar. All vinegars contain acetic acid – which is what makes them sour – but changing the starting material will affect the taste and color. Pretty much any vinegar can be used to remove frosting, or make a marinade, or mix with any salad dressing, but each has a unique flavor profile and its own set of talents. Here are just a few of the many vinegars that can be found in this wild world, as well as my favorite uses for them.
