Make Waffles Tiny Potatoes

A few nights ago I watched a video of a woman screaming about potatoes . I still don’t know who this woman was, but the moments that she expressed in her video are absolutely true, the main thing is that potatoes are always a good and normal dish. Since then I really want potatoes, and last night I ate them.

Making them was simple: I bought a bag of small purple legs, split them in half, and cooked as many as would fit in my deep fryer basket. I have seven small potatoes left, which I decided to eat for breakfast this morning.

Making them home-style fries would be a good choice, but I didn’t feel like dicing or frying. No. I wanted to nuk and smash. So I microwaved some of the legs until they were tender, covered them with a thin layer of bacon fat and flattened them between the hot and powerful waffle iron plates. Like any other waffle-friendly product, the waffled small potatoes are crispy and sprinkled. The added texture made them sticky and sticky – perfect for dipping in sour cream (or crème fraîche) and rubbing in sauces (or egg yolk). As I mentioned earlier, there is an additional step before the waffles are cooked, but this is just a small part of the microwave cooking. To make tiny waffled potatoes, you will need:

  • some tiny potatoes (as much as you like)
  • some kind of cooking oil (I used bacon fat)

Place the potatoes in a microwave-safe bowl or container and cover loosely. You can use plastic wrap (and make a tiny hole with a paring knife) or place whatever lid the container came with (but don’t cover it). Cook in the microwave until the potatoes are completely tender — usually 4 to 7 minutes, depending on their size. Remove from microwave and remove lid to evaporate excess moisture. If you notice a buildup of water, simply wipe it off with a paper towel. Spoon some bacon fat (or other cooking oil) 1/2 teaspoon at a time, until the potatoes are coated.

Heat waffle iron to low and add potatoes. Using a tea towel or dish rack to protect your hand from the hot metal, hit the top of the waffle iron to flatten the little guys. Cook until they are crispy on the outside (about 2 minutes), then remove from the waffle iron and season with salt (and pepper, if desired). Serve with runny eggs or some kind of dipping sauce.
