Bitter Peach Is My Favorite Birthday Drink

I am writing this edition of Happy Hour 3 Ingredients three days before it is published. As I write this, I am 33 years old. Tomorrow I will be 34. When you read this, I will be 34 for two days now. This is how time works – it goes onwithout waiting for anyone (not even Mick Jagger , another famous Leo).

Thanks to … everything, my original birthday plan – to have a big Russian disco DJ in my favorite bar – is not being fulfilled, but it’s hard to stop Leo from celebrating himself (and I’m a double Leo). By “celebrating,” I just mean disconnecting Twitter from your phone for a few days and drinking in the sun. Perhaps I will sit in nature. Maybe I’ll stay at home and watch Star Trek.

In terms of drinks, you know I love effortless libations that feel festive but require very little work from me. I also like Campari and Bubbles. Combine these two drinks with a little peach liqueur – to celebrate my summer birthday – for a complete cocktail that’s the perfect balance of sweet, bitter and sparkling. It is also a pink color that is nice to look at. To make Claire’s 34th Anniversary Cocktail Bitter Peach, you will need:

  • 1/2 oz Campari
  • 1/2 ounce peach liqueur
  • 3-4 ounces champagne or other sparkling wine

For best results, chill everything, not just the champagne, then pour the first two ingredients into the chilled compartment with a glass of champagne. Top with sparkling wine, toast to me and my accomplishments, then repeat until all sparkling is gone.
