Bless Your Spiced Eggs With Grated Sun-Dried Yolks

I did a lot of sour , which means I used a lot of egg whites. The matching yolks are dried and then rubbed onto salads, pizza slices, pasta plates and, more recently, spiced eggs. Eggs on eggs may seem overwhelming, but sun-dried yolks are concentrated, full-bodied, savory versions of themselves, and that taste is exactly what you want from a spiced egg.

This video will walk you through the curing process – a simple yet delicate procedure. For each yolk, combine 1/4 cup sugar and 1/4 cup salt, then make a small pillow out of half. Place egg yolks in a bed salgura , then fill them remaining mixture. Place them in the refrigerator for about five days. When they become hard, wash off the excess sugar with cold water and dry them in the oven at 200 degrees for half an hour.

The next time you cook seasoned eggs , apply savory little washers all over the finished product right before serving for a supremely yolk, absurdly flavorful bite.
