Chop the Onion Last
If you are cooking with a lot of ingredients that require washing, scrubbing, and chopping, you might want to arrange your little finger . Arrange all the ingredients in neat little stacks (or tins), which means you can follow the recipe at just the right pace without distracting from the game. The order in which you cook the misé doesn’t really matter, but with one caveat: you should cook the onions last.
As we all know, onions are full of pain. Once you rupture their cell walls, they release enzymes in response that rearrange themselves into various compounds, including syn-propaneethyl S-oxide, a compound that makes you cry. (This is essentially tear gas.)
Obviously, you want to hang out with this dude as little time as possible, so slicing onions (or worse, shallots) should be the last thing in your preparation so you don’t have to cry to the end – or wear stupid glasses during – the process. chopping carrots, root vegetables, herbs, and everything else that goes into your recipe. The only exception is when you know that you need to caramelize these onions before proceeding with the recipe. As we all know, caramelizing takes longer than you expect, so chop the onion and place it in the pan to start the whole process, then finish the rest of the misé .
