Use an Old Pickle Jar to Measure Out the Ideal Amount of Pickle

Most pickle recipes – even cold pickle recipes – are for making a lot of pickles, but if you live in a tiny space, or want a lot of cans of several different types of pickled vegetables, this large-format ratio can be annoying to reduce. But you don’t really need a recipe to make pickles in the refrigerator; You just need an old pickle can.

This idea, which came to us from our creative producer Heather, is elegant and ensures that you end up with the right amount of pickle. Take an empty jar and fill it with cucumbers or other vegetables you want to pickle. Then, leaving the vegetables in the jar, pour the mixture of half vinegar and half water into it (you can also by eye). Pour the mixture into a saucepan and add sugar and salt. For medium cans, start with 1/4 cup sugar and 1 tablespoon salt, but you can change this ratio if you like. Add garlic, herbs or herbs and bring everything to a boil. Pour the hot liquid (ideal amount) back into the already filled brine jar. Allow to cool on the counter and transfer to the refrigerator. You can enjoy them as soon as they cool, but try to let the scent emerge at least overnight.
