You Should Make a Brulee for Your Next Glazed Donut.

A good donut doesn’t rely on gimmicks, but a gimmick can help a poor quality donut. It doesn’t matter how artisanal or famous a donut shop is, if they can’t produce a decent simple, yeast-leavened, glazed donut – without covering it up with distracting ingredients – that’s a poor donut shop.

While I’m not interested in the ganache, basil, or cereal creations this city has to offer – I like the Krispy Kreme donut or the grocery store donut much better – there is one modification of the trendy pants that I like to apply to the smooth frosting, especially if it’s too sweet. and solid, or sat for several days and began to lose its luster: hit on top with a brulee burner.

It takes less than a minute and you get the same crispy caramelized crust as your grilled donuts without having to go outside and light up the grill. The donut does not even need to be sprinkled with sugar, since it is already coated in large quantities. It will begin to bubble and melt and then begin to brown – just keep the flame moving smoothly until you get a circle of dark caramelized sugar. (Like my marshmallows, I love my brulee, which is slightly dark in spots, but you can stop a little earlier.) Once your donut is browned the way you want, let the sweet crust set for a few minutes before enjoying. (It’s best to feel the crunch of your teeth through the crust.)
