My best street food was to hire a Wafels & Dinges truck to cook desserts at a wedding. Food vans are the trendiest form of street food right now, but your favorite diner could be a cart, stand, trailer, or someone rolling a cooler around the park.

Urban street food could be legendary. Tamale lady from San Francisco, may she rest , used to feed drinkers in bars like the Zeitgeist. And I never caught Arrested Development Austin -inspired Bananarchy in working hours, in spite of making the trip across the river to eat a frozen banana.

Even ordinary carts of ice cream, pretzels or peanuts can become an integral part of a city or area. There is always a line for breakfast sandwiches on the sidewalk northwest of Union Square. And one winter night, my wife and I made a 12-hour Amtrak ride from my parents’ house. There was a blizzard, one of the worst, and all restaurants closed. After walking down the uncleaned sidewalks, we found a halal cart that is still working. We were at home.

Street food kicks off trends. Many great restaurants, cafes, and eateries started out as street food : New York has Big Gay ice cream, Van Leeuwen, Halal Guys, Korilla and many more. One of the first practical uses of Twitter was tracking taco trucks. As a genre of cuisine, it is usually cheap, fast, and democratic. While popular in all types of cities, it is especially useful in a walking city where you can have lunch on your way to your next meeting.
