Use Labneh to Make the Best Frozen Yogurt Lollipops

In the frozen dessert hierarchy, frozen yogurt popsicles rarely make it to my top 10. Designed to trick children into thinking they are eating “dessert”, these fruit and yogurt ice sticks rarely achieve the desired texture and flavor. be considered “condescending”. However, all this is corrected by replacing the “regular” yogurt with a thicker, much tastier labnech .

Labne is a strained yoghurt cheese, the best of all dairy universes. If you were to draw a Venn diagram with three circles labeled sour cream, cream cheese, and hot yogurt, Labne would be right in the center.

It has so much flavor that nothing else needs to be added. Mix it with some very good fruit preserves and freeze and you have cheesecake-flavored yogurt. Combine it with tahini and honey (and sprinkle with sesame seeds for good measure) for a delicious, slightly savory dessert that you won’t want to share with your kids. To make four large yogurt lollipops, you will need:

  • 2 cups labne (store bought or homemade )
  • 1/4 cup flavors (tahini, canned fruit, nut butter, macerated fruit)
  • 2 tablespoons honey (reduce or eliminate if using a sweet mixture such as canned fruit)

Add everything to a bowl and stir. Try it and add more honey if you like. Transfer the mixture to ice cream molds using a funnel and chopstick if necessary and freeze overnight. Dip the pan under hot water to lighten the flakes (if needed) and enjoy the creamy, spicy yogurt-based dessert you have ever tasted.
