What Are Your Food Decisions for 2018?

Hello and welcome back toWhat’s Cooking? , an open thread where you can share your brilliant thoughts, tips, recipes and opinions on all food related matters. This is a new year, which means people are making all sorts of changes, especially in the kitchen.

I’m not a big fan of traditional resolution, but I like to set one or two goals at the beginning of each year. This usually means learning a new skill, mastering a recipe, or incorporating a new food into my life. Of course, I want to know all about your big culinary plans for 2018 and, as always, I have a few questions.

  • Does your New Year’s decision involve eating more vegetables or drinking more water? How do you plan to do this? For years I tried to force myself to drink more water. Any advice is greatly appreciated.
  • What dish do you want to learn how to cook perfectly in 2018? I want to get better at baking in general, but I would like to learn how to make really good homemade croissants. I also have a few sous video recipes that I would like to revise and refine.
  • Got a fancy kitchen toy for the holidays? What do you want to do with it? I’ve heard that many have Instant Pots. These people should have short ribs .
  • What culinary skills do you want to hone in these recent years? My knife skills are not amazing. I want to fix this.
  • What explanations or guides would you like to see on Skillet this year? I’m here to help.
  • Are you planning to get to know a particular cuisine better? Aside from gumbo, I love Cajun food more than Cajun food, so I am very happy to expand my repertoire.
  • What cookbooks do you want to work on? The book of Bravetard is my priority.
  • How will you prepare your kitchen for 2018? I’m going to clean out the deep fridge and freezer today, and I’m going to be cleaning my damn oven.
