Three Ingredient Happy Hour: Gold Rush

Happy (well deserved) weekend and welcome back to Happy 3 Ingredient Hour , a weekly drinks column featuring super simple yet delicious libations. This week we’ll be focusing on the highlight of my favorite Bourbon-based Bee Knees : Gold Rush.

I don’t know your life, but I have a feeling that this week has been a little difficult for everyone. Mine began with an illness, then ashes fell from the sky , but now I am most worried that my friends in Florida will be carried off the face of the earth. So I’m pretty nervous and don’t have the time or bandwidth to mess around with a fancy cocktail. Gold Rush is not only very easy to make, but it also contains ingredients you probably already have on hand, which means you don’t have to go to the store. (I’m so tired of going to the store.)

To make this powerful no-nonsense drink, you’ll need:

  • 2 ounces bourbon (I like 100 or better here).
  • 3/4 ounce lemon juice
  • 3/4 ounce honey or honey syrup

Now, just like with Bee’s Knees, it’s up to you whether you use honey or whip syrup. Pure honey will take a little more shaking to dissolve and will have a stronger flavor. If you prefer syrup, simply mix equal parts honey and water and heat until the honey dissolves. (You don’t even have to do a lot of this; you can do quite a bit in a circle .)

Once you’re done with the honey situation, pour everything into a cocktail shaker filled with ice, or simply toss in one large cube and shake until the shaker is very cold. Fill another large cube and take a deep, soothing sip.
