3 Unexpected Things You Can Do With Mayo, but Not Your Coffee

Some men just want to watch the world – or at least Twitter – burn, and one such person is sports columnist Jim Salisbury, who recently tweeted that he once added mayonnaise to his coffee.

This is clearly bad and wrong, but not because mayonnaise itself is bad and wrong, it just is not suitable for coffee. However, it has many places and uses. An emulsion of egg yolk, oil and acid not only plays a key role in my favorite tomato sandwiches, but it can also work magic in unexpected dishes. Here are a few of my favorite uses for mayonnaise, a condiment that everyone (unfairly) loves to hate:

  • Stir it into mashed potatoes: My stepmother always made the best mashed potatoes, and no matter how much cream or butter I add, I can never get the same creamy as hers. She once (reluctantly) admitted that her secret was mayonnaise. Adding mayonnaise doesn’t make your mashers taste like mayonnaise – I’ve eaten these potatoes with mayonnaise for years and never noticed it – but it gives them incredible richness and amazing velvety texture. My stepmother adds 1/4 cup for every 3 cups of potatoes; Justin Chapple adds a whole cup for every £ 4 .
  • Add it to your cake batter : I know you’re going to go crazy, but take a breath and remember that mayonnaise is just eggs and butter, maybe with a little lemon juice, and these are perfectly normal cake ingredients. The emulsified butter and yolk make the cake very moist and tender, which is exactly what you want the cake to be after all. Need a prescription? I love this one from Serious Eats .
  • Smoother grilled cheese: Not all cheeses melt like American cheeses, but that doesn’t mean they can’t be added to a great grilled cheese sandwich. In mayonnaise stronger smoke than those of butter , and it means that the spread with their bread can stay longer in the pan, not Bree. The bread will crumble nicely, and the cheese will have time to melt.

Just don’t add it to coffee. There really is no need for such indecent behavior.
