Make This Simple Miso Marinade for Any Meaty Need

The more I use miso, the more I become convinced that other flavors are simply not needed. Not only is it highly addictive to soups, sauces, and desserts, but it also makes a heck of a delicious marinade.

Because fermented soybean paste has such a unique and complex zesty-sweet-funky flavor, marinating meat with it only requires two other ingredients: alcohol and some kind of sugar. Mirin is a traditional dish , but you can also use plain table sugar to sweeten the sauce. This marinade is great with any protein, from tough cuts of beef to tender scallops. For a pound and a half of protein, you need:

  • 1/3 cup miso, whichever color you prefer: Try to match the miso to the meat and pair a darker, more flavorful miso with richer cuts of beef, etc.
  • 1/4 cup mirin or 4 tablespoons sugar: You might even go crazy and taste some brown sugar.
  • 3 tablespoons of alcohol: Sake is the traditional and obvious choice, but you can use wine, vermouth, or even whiskey.

According to Serious Eats, once your miso mixture is ready to eat, you simply rub it on your chosen protein and let everyone familiarize yourself in the refrigerator for at least five hours or up to two days. Wipe it dry, pat dry with paper towels, and fry as usual.
