How to Make Enough Cocktail Syrup

It’s nice to have a well-stocked home bar with all the supplies and equipment, but if you don’t want a bunch of syrups to overflow your fridge, you can cook just the right amount using the microwave.

As a cocktail lover who has a tiny fridge, I find this particularly useful (and don’t know why until last week it never crossed my mind). By switching from the stove to the microwave, you can reduce the syrup volume from one to two cups to a few tablespoons.

Just add sugar (or honey) and water to a mug, hold for 30 seconds and stir. Half a minute is usually enough for everything to dissolve, but if it isn’t, just continue microwave heating at five-second intervals, stirring in between. In terms of ratios, I like to use 1: 1 white sugar and water for simple syrup, 2: 1 turbinado sugar and water for demerara syrup, and 1: 1 honey and water for honey syrup, but feel free to experiment with these. ratio according to your personal preference.
