What’s Your Favorite Regional Dish That You Think No One Knows About?

Regional produce is often the best hidden gem of any region. Whether it’s knoefla in North Dakota or shrimp and grits in North Carolina , there is food everywhere, and we want to hear about your favorites.

Personally, my favorite is the Colorado / New Mexico style green chili. I didn’t even realize it was a regional issue until I left Colorado. Each, of course, has its own little variations , but this is, in fact, diced or grated pork shoulder, a couple dozen fried green chili (preferably hatch), tomato puree (or tomatillo) and various spices. The end result is a semi-stewed sauce that can also be placed on top of a burrito .

Anyway, it’s me, let’s hear your thoughts. We all know about Chicago deep pizza and Mission San Francisco-style burritos, but what about Detroit’s Boston Cooler ? Or hot Kentucky brown ? This isn’t just for the US of course, so play your favorite songs wherever you are or wherever you are.
