Will It Be Sous Vide? Let’s Pick a Different Theme!

Hey sous-vide friend, and welcome back to another session on topic picking forWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.

Last week’s meaty adventure was almost flawless and I don’t know if we can ever beat it, but we have to try. Here are some ideas:

  • Ice Cream: The weather is getting warmer and we’ve been talking about using Anova to make an ice cream base for a while now. Perhaps now is the right moment.
  • Root Vegetables: I know some of you were worried about the caramelization, but myrealnameisdj seems to have solved this problem and I would like to try it myself.
  • Some types of shellfish: lobster tail? Shrimp? Soft shell crayfish?
