Will It Be Sous Vide? Let’s Pick a Different Theme!

Hello my beloved friends, and welcome back to the final session of the year on theme picking forWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.

We tested tamales last week , and I would love to come back to this at some point, but I would love to do something fun and festive for our last big experiment in 2016. (Also, I currently work in my grandmother’s kitchen in a small Mississippi town, so I wouldn’t mind making it pretty simple in terms of ingredients.) Some ideas:

  • Chicken Liver Mousse: I saw this turn into a very flavorful, New Year’s Eve canapĂ©.
  • Hoppin ‘John: Because I love black eyed peas.
  • Some types of pickled fruits: for adding to ice cream, cakes, oatmeal, etc.
  • Chicken wings: Of course, cooked with a roast. (TSA would not let me bring a propane burner.)

As always, I’m open to any holiday suggestions that might pop up in your lovely brains, so go crazy!
