Why You Should Cut Aged Crumbly Cheese Into Mandolin Slices
Ultra-hot cheddar slices make wonderful, salty ingredients for hamburgers, sandwiches, and even old crackers, but its seasoned character makes it difficult to cut without crumb. Use a mandolin knife to create thin, almost delicacy slices that will retain their shape.
Let Helen Rennie show you how to properly use the slicer in the video above, but keep in mind that the feature that makes it so good at slicing (it’s an awful sharp blade) makes it all over the place dangerous to your fingers. So use that protection and maybe even get a cut resistant glove. Also keep in mind that mandolin is best for hard, aged cheese with a lot of crystals ; softer cheeses like chevre will simply brighten up your blade. ( Unscented dental floss is the best option for slicing soft tissue .)
