Save the Fried Mushroom Liquid for the Savory Seasoning With Added Umami

Like all fried vegetables, fried mushrooms are delicious. If you’ve ever cooked them, you most likely noticed that some liquid has accumulated in the pan. This liquid should be drained to brown, but do not discard it as it makes a delicious savory seasoning.

Serious Eats calls it “mushroom juice,” but it’s actually mushroom juice with olive oil, salt, pepper, and whatever spices you mix into the mushrooms. Like the mushrooms themselves, it is filled with kindness of minds and can be used as a soy sauce. Add it to a stew, drizzle with rice, or use as a finishing sauce with meats, seafood and vegetables.
