Cauliflower Makes Great Gluten-Free Mince

Cauliflower is a really great vegetable to use in place of carb in recipes. If you can’t or don’t eat bread, but still want a flavorful and homemade turkey, consider making this cauliflower “filling” from Delish. (Technically, I think it would be a “bandage”, but I will allow myself to do so.)

The original recipe (link below) is completely filled with vegetables. In addition to cauliflower, you will find onions, celery, carrots, and mushrooms, but feel free to add whatever vegetables and herbs you use in your favorite toppings. Simply sauté the onions, celery and carrots until soft, then add the finely chopped cauliflower and mushrooms. Cook until tender, then add your favorite herbs. (Delish recommends a mixture of parsley, rosemary, and sage.) Pour in the tasty broth, cover, and simmer until the cauliflower has absorbed the liquid (about fifteen minutes).
