This DIY Cake Strip Allows You to Bake Perfectly Flat Cake Layers

Perfectly even layers for a flaky cake are the key to an even icing, quick assembly, and a cake that looks as good as it tastes. Sure, you can try to trim the layers as they come out of the oven, but this DIY strip is easy to make and does all the work for you.

If you’ve ever got a dome in the center of a cake, this is the result of the outer edges cooking faster than the middle due to contact with the side of the cake pan. The cake strips keep the outside of the pan cool, so the outside edges and middle are cooked together, resulting in a flatter layer. All you need to make a cake strip are scraps of an old shirt or kitchen towel and two safety pins.

Cut the fabric so that it wraps around your pan at least once. You can wrap it more than once to create more coverage. Just before placing the cake in the oven, dampen a cloth well and squeeze out excess water. Wrap the pan in a cloth and pin off the edges. That’s it – just make sure no edges come into contact with heating elements in the oven.
