Make a Delicious Creamy Chocolate and Sweet Potato Frosting

The “vegetable frosting” may not sound very appealing, but sweet potato puree is actually the perfect base for a rich, decadent chocolate frosting.

You only need two things to make this sweet treat: a can of the aforementioned sweet potato puree and ten ounces of finely chopped bittersweet chocolate. Just let the puree simmer, remove from heat and add chocolate. Let it cool, stirring occasionally, until the mixture reaches the consistency of canned glaze. Spread them on the Food52 Leafy Zucchini Cake (link below) or any other cake that catches your fancy. (I bet that’s pretty good with a spoon, too.)
