The video above from BuzzFeed Tasty shows you how to get started with a frying pan to protect it from rust and create a non-stick cooking surface. The following explains that you need to preheat the pan to get an even cooking temperature. Note: the video incorrectly says that cast iron is a good conductor of heat, but the opposite is true. Although it retains heat very well, it takes time for the heat to travel through the entire pan, so it may not heat up evenly. Hence the need for preheating.
Cast iron pans may take a little more work than a regular skillet, but they will last forever and are versatile to work with just about anything you need to cook on the stove top.
