Reheat Baking Sheet Super Fast for Crispy Chicken Cutlets
Breaded crispy chicken cutlets are the basis for great chicken meat (and they’re pretty good on their own), but setting up an entire frying station is a little time consuming. To prepare super crispy chicken cutlets baked in the oven in record time, you just need to preheat a baking sheet.

In this recipe, you lower one wire rack all the way down (this makes the bottom of the cutlets nice and crispy at the start of cooking) and lift one wire rack all the way up (this helps melt and brown the mozzarella at the end of cooking).
Once you’ve set up your grates, insert a baking sheet in there and heat everything up to 450 degrees Fahrenheit, the temperature at which the patties “bake quickly (thus capturing juiciness), toast the breadcrumbs crust until the perfect dark brown (but not burnt out) shade “. Dip the patties in the egg wash, push them through the breadcrumbs and place on a preheated baking sheet. Place the leaf on the lower wire rack, cook for six minutes, turn over, move the entire situation to the top wire rack (sprinkle with mozzarella if you are making chicken Parmesa) and cook for another four minutes.
