Will It Be Sous Vide? Let’s Pick a Different Theme!
Welcome back cats and kittens for another exciting session of theWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.
As you probably guessed, I was extremely happy with last week’s topic, so thanks for the beef tongue vote. I would like to think that we all won that day, but mostly I, because now I have a lot of delicious beef tongue to eat.
I can hardly imagine how to cover the tongue, but I have to try. Here are some possible topics to consider:
- Pasta: I’d like to cook it in different amounts of water – or maybe just toss it in there with a can of tomatoes? – as torchbearer2 suggests .
- Pecan Pie: As Amoracchius suggested, because I want all the pies to be lifted . (Also pecans are my absolute favorite.)
- Fish in milk: This would be similar to the poaching proposal in this article , but it would be interesting to compare fish (probably halibut or salmon) in butter, milk, butter, and nothing.
Ok, this is my choice, but you can of course go crazy in the comments. Although this week we might need to cut off offal; not everyone can hang around with all the guts all the time.
