Boil Potatoes in Half the Time Using an Electric Kettle
Boiling potatoes is the first step to getting mashed potatoes, and mashed potatoes are what I want in the face as quickly as possible. To speed up this delightful process, Epicurious recommends using an electric kettle.
If you are serious about drinking tea, you probably know that an electric kettle can bring water to a boil in minutes. (Don’t worry if you don’t have one, the kettle will speed up the potato process anyway.):
The directive is intended to save time. Unlike stovetop kettles, electric kettles bring water to a boil in minutes. But even if a simple kettle is all you have, if you pour the water the moment you walk through the door, you’ll already have boiling water by the time you collect and prepare the rest of the ingredients.
Simply pour boiling water over the sliced potatoes and continue cooking until the potatoes are tender. (This should only take five minutes.) When they’re done, mash them, make a hash, or fry them until crisp .
