Serious Eats’ J. Kenji López-Alt takes on McDonald’s popular McRib sandwich with his own refined version: Ribby McRibface. To make a delicious McRib-but-better, you’ll need back ribs, pork shoulder, BBQ dry mix, BBQ sauce, onions, pickles, and a few rolls. According to Lopez-Alt, the secret to making perfectly textured and flavorful patties like the McRib is to grind the already grilled baby’s back ribs with a raw pork shoulder. This gives the patties an extra smoky flavor even before they reach the wire rack. There are many homemade versions of McRib out there , but this one is sure to be loved .
