Chickpeas Are a Surprisingly Good Substitute for Tuna Salad
It cannot be denied that chickpeas are the shining star in the world of vegetarian substitutes. It makes great pancakes, its liquid can replace egg whites , and it makes a great salad similar to tuna.
Chickpeas provide texture and a slightly meaty, zesty flavor, but to get that oceanic flavor, The Kitchn combines processed beans with umeboshi vinegar , which has a “seafood flavor.” (If you want to boost the sea chicken factor, you can also chop some nori in there.) It is mixed with mayonnaise, celery, mustard and a few other spices and blended in a food processor until smooth. after which you can enjoy it, but you like to eat tuna salad. (I’ve heard bread is a regular vessel, but I’ve always liked mine with apple slices.)
