Miso and Pork Make a Delicious Sauce

We tend to think of sauces as white, creamy liquids with bits of herbs or other greens hanging from them, but Serious Eats has a recipe unlike anything I’ve ever dipped carrots into, and it contains pork, miso. , and walnuts.

At first glance, the meat-based sauce may seem a little odd, but when combined with miso and roasted walnuts, you have something really tasty and solid to dip your vegetables into. In addition to these three ingredients, you will also need mirin (rice wine), sugar, dashi, and diced onions. The onions are cooked until translucent, after which the pork is added and fried. Then toasted ground walnuts are added, followed by a mixture of miso, dashi, mirin and sugar. All of this is reduced until you have a thick paste that can then be served with raw vegetables, salad cups, or some kind of chips or tortillas.
