The Easiest and Most Delicious Ice Cream Cake Is Just Folded and Frozen Ice Cream Sandwiches
I really don’t consider a dessert “complete” if it doesn’t have ice cream in it. So it won’t surprise you that my favorite cake is ice cream cake and I am very obsessed with this little number from Epicurious , which is really just a bunch of ice cream sandwiches stacked and topped with whipped cream.
While this may seem overly simplistic, it actually makes a super delicious and visually stunning dessert. And yes, its super duper is easy to assemble, but that shouldn’t make you angry. Just whisk in some cream (add peppermint extract if desired, like in the link below) and stack it with 16 ice cream sandwiches, four on each layer. Freeze for an hour, freeze with the remaining whipped cream, and freeze for another half hour. After you swallow this, play with the different sandwich and cream flavor combinations. I especially like the Neapolitan ones.
