Microwave Simple and Delicious Sweet Potato Chips

The microwave is popular for several reasons: it is convenient and fast, but it mainly provides a “drying” effect that gives sweet potatoes the crispiness of store-bought sweet potato chips.
First, you need to cut the sweet potatoes into even thin slices. The mandolin will do the job easily, but if not, make sure your knife is sharp enough to handle the job. Toss them in a bowl with ghee or olive / coconut oil and some seasonings (like chipotle powder or pepper!).
Line a microwave-safe dish with parchment paper and make sure the sweet potato slices are not crowded to ensure an even cooking. Cooking time depends on your microwave oven and the thickness of the slices. Try starting at four minutes and continue adding 30 seconds until the chips are golden brown.
