Even if you are kitchen savvy, baking can be a very different problem. Ovens are often finicky, but Epicurious has some decent rules to follow to properly use the oven, depending on what you’re cooking.

As they point out, baking requires precision, and the position of the rack in the oven can make a big difference. Here’s a quick and easy example of which rack to use depending on what you’re baking.

Top grill : suitable for a rich and even browning. Epicurious indicates that after preheating an oven, its heating element turns on and off to maintain uniformity. Heating rises at the top, so the temperature on the top shelf is more stable. They add that it is ideal for dishes that need to be browned, such as casseroles, casseroles and chips.

Bottom shelf: The oven heating element is at the bottom, so if you want to brown the bottom of a dish (like pizza, bread or cake), move the wire shelf to the lowest position because it will be closest to the heat source.

Middle shelf : This is generally a safe place to ensure that food is cooked evenly. However, according to Epicurious, this only applies when you bake one thing at a time. If you have two sheets running at the same time, move the racks to the top and bottom thirds. Then turn them halfway to cook evenly.
