Make a Very Crispy Tortilla Pizza in a Cast Iron Skillet

These crunchy tortilla pizzas are easy to make, take very little time and are the perfect snack for game days or movie nights. Here’s how to do it at home.

J. Kenji Lopez-Alt of Serious Eats was not originally a fan of tortilla crust pizzas, so he decided to find a way to make them amazing. While a baking sheet or pizza stone is usually best for making great homemade pizzas, Lopez Alt advises avoiding them entirely if you want to use a flour tortilla for the crust. Instead, you want to place the pizza in a cast iron skillet.

Start by adding oil to the skillet, then heat it over high heat until the oil starts to shimmer. Once this happens, reduce heat to low and wipe off the oil with a paper towel. Then add the flour tortilla to the skillet with the smaller bubbles facing down (this will provide a crispier crust). Now add the sauce, cheese and your favorite toppings. After the pizza is full, place the pan under the broiler for about three minutes to finish cooking and the pizza is ready to eat.
